Spicy Caramelized Onion & Mushroom Grilled Cheese Omelette
This omelette is the ultimate breakfast/brunch/dinner/late-night snack, loaded with flavorful ingredients between golden brown slices of bread. The combination of caramelised onions, mushrooms, spinach, and melty cheese makes it a must-try dish.

Ingredients
- 1 piece onion
- 2 cups mushrooms
- 2 tablespoons butter
- 1 piece onion

- 2 tablespoons chilli oil
- 1 handful spinach
- 3 pieces eggs
- 1 bunch scallions
- 0.5 teaspoons salt
- 0.5 teaspoons pepper
- 0.5 teaspoons chilli flakes
- 0.5 teaspoons oregano
- 1 batch egg mixture
- 2 slices bread
- 0.25 cup herby garlic butter
- 0.5 cup cheese
- 1 batch reserved caramelised onions and mushrooms
Instructions
- Slice 1-2 onions lengthwise into thin strips about 1/4 inch wide.
- Slice 1-2 cups of mushrooms into thin slices.
- Heat 2 tablespoons of butter in a large pan over medium heat until melted.
- Add the sliced onions and mushrooms to the pan and sauté until they are caramelised and golden brown, about 10-15 minutes.
- Stir in 2 tablespoons of chilli oil and cook for another 1-2 minutes.
- Remove half of the caramelised mixture from the pan and set it aside.
- Add a handful of spinach to the pan with the remaining onions and mushrooms and sauté gently until the spinach is wilted.
- In a bowl, crack 3 eggs and whisk them with sliced scallions, salt, pepper, chilli flakes, and oregano.
- Pour the egg mixture into the pan, spreading it evenly over the vegetables.
- Place two slices of bread on top of the eggs, and apply herby garlic butter onto the bread.
- Once the eggs are set, flip everything, carefully ensuring the bread and eggs remain intact.
- Add your favorite cheese and the reserved caramelised onions and mushrooms, then fold the omelette into a sandwich.
