Homemade Chicken Noodle Soup
Homemade Chicken Noodle Soup Sometimes all you need is a warm hearty bowl of chicken noodle soup, easy to make and filling! Good to freeze too!

Ingredients
- 2 lb chicken breast
- 1 tbsp olive oil
- 2 lb chicken breast
- 0.5 medium onion
- 1 tbsp garlic paste
- 4 medium carrots
- 4 stalks celery stalks
- 1 medium potato
- 6 cups chicken broth
- 2 lb chicken breast
- 2 sprigs thyme
- 2 sprigs rosemary
- 10 oz cream of chicken soup
- 10 oz cream of mushroom soup
- 3 tsp garlic powder
- 3 tsp onion powder
- 3 tsp dried oregano
- 3 tsp black pepper
- 2 tsp smoked paprika
- 2 lb chicken breast
- 8 oz egg noodles
- 2 tsp salt
- 2 tbsp parsley
Instructions
- Rinse and pat dry 2 lb of chicken breast.
- Heat a large pot over medium-high heat and add 1 tablespoon of olive oil, until shimmering.
- Add the chicken breast to the pot and sear for 3-4 minutes per side until golden brown.
- Remove the chicken from the pot and set aside.
- In the same pot, add 1/2 medium diced onion and sauté for 3-4 minutes until it becomes translucent.
- Add 1-2 tablespoons of garlic paste and cook for another minute until fragrant.
- Add 3-4 chopped medium carrots, 3-4 chopped celery stalks, and 1 diced medium potato. Cook for 5 minutes, stirring occasionally.
- Return the chicken to the pot and pour in 4-6 cups of chicken broth.
- Add chopped thyme, rosemary, 10 oz can of cream of chicken soup, and 10 oz can of cream of mushroom soup. Stir well.
- Season the soup with 2-3 teaspoons of garlic powder, 2-3 teaspoons of onion powder, 2-3 teaspoons of dried oregano, 2-3 teaspoons of black pepper, and 1-2 teaspoons of smoked paprika. Stir thoroughly.
- Bring the soup to a boil, then reduce to a simmer. Cover and cook for 20-25 minutes, until vegetables are tender and chicken is cooked through.
- Remove the chicken breast, shred it using two forks, and return it to the pot.
- Add preferred amount of egg noodles to the pot and cook for additional 8-10 minutes until noodles are tender.
- Season with salt to taste, if necessary, and stir well.
- Garnish with fresh parsley before serving, if desired.
