Ingredients
- 1 zucchini
- 2 green onion stalks
- 2 tomatoes
- 3 large eggs

- 1 bunch fresh dill or your favorite herbs
- 0.5 tsp salt
- 0.25 tsp black pepper
- 1 tbsp olive oil
- 2 tomatoes
Instructions
- Preheat your oven to 200°C (400°F).
- Dice the zucchini into small cubes, approximately 1/2 inch each.
- Chop the green onion stalks finely.
- Slice the tomatoes into thin rounds, about 1/4 inch thick.
- In a medium bowl, whisk together the eggs until the yolks and whites are fully combined.
- Add the diced zucchini, chopped green onions, fresh dill (or favorite herbs), salt, and pepper to the eggs. Stir to combine well.
- Line a baking dish with parchment paper and drizzle with olive oil.
- Pour the egg mixture into the prepared dish spreading it evenly.
- Arrange the tomato slices evenly across the top of the egg mixture.
- Bake in the preheated oven for 10-12 minutes, or until the eggs are fully set and the top is slightly golden.
- Remove from oven and let cool slightly before slicing and serving.
