Cashew Nut Chicken

Ingredients

  • 300 g chicken breast or thigh
  • 1 piece egg white
  • 2 tbsp cornflour
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 0.25 tsp salt
  • 0.25 tsp black pepper
  • 500 ml oil
  • 300 g chicken (marinated)
  • 0.5 cup cashew nuts
  • 2 tbsp oil
  • 1 tbsp chopped garlic
  • 3 pieces green chilies
  • 1 tsp Sichuan peppercorns
  • 1 piece green capsicum
  • 1 small onion
  • 1 cup cabbage
  • 2 tbsp oyster sauce
  • 2 tbsp dark soy sauce
  • 1 tbsp light soy sauce
  • 1 tbsp vinegar
  • 1 tsp chicken powder
  • 1 tbsp brown sugar
  • 1 heaped tbsp cornflour
  • 0.33 cup water
  • 1 tsp sesame oil
  • 2 tbsp spring onions
  • 1 tbsp sesame seeds

Instructions

  1. Slice the chicken breast or thigh across the grain into thin strips.
  2. In a bowl, combine chicken with egg white, cornflour, garlic powder, onion powder, a pinch of salt, and black pepper.
  3. Let the chicken marinate for 15–20 minutes.
  4. Heat oil in a pan for deep frying.
  5. Deep fry the marinated chicken until golden and crispy. Remove and drain excess oil on paper towels.
  6. In the same oil, fry cashew nuts until golden, then set aside.
  7. In a hot wok, heat 1–2 tbsp of oil and sauté chopped garlic, slitted green chilies, and Sichuan peppercorns until fragrant.
  8. Add cubed green capsicum, onion, and cabbage to the wok. Stir-fry on high heat for 1 minute.
  9. Prepare the sauce by combining oyster sauce, dark soy sauce, light soy sauce, vinegar, chicken powder, and brown sugar.
  10. Pour the sauce mixture into the wok and stir well to combine with the vegetables.
  11. Return the fried chicken and cashew nuts to the wok, tossing to coat everything evenly in the sauce.
  12. In a small bowl, mix the cornflour with water to create a slurry.
  13. Pour the cornflour slurry into the wok and continue cooking until the sauce thickens and clings to the ingredients.
  14. Drizzle sesame oil over the stir-fry and remove from heat.
  15. Garnish with chopped spring onions and sesame seeds before serving.
  16. Serve hot with steamed rice.
