Maple Pudding Cake with Sugared Plums

A delightful North American maple pudding cake topped with tart, sugared plums. The sweet and soft cake pairs perfectly with the fresh and juicy plums, creating a sweet and tangy dessert.

Maple Pudding Cake with Sugared Plums

Ingredients

  • 1 lb plums pits removed and cut into quarters or sixths
  • 2 Tbsp sugar
  • 0.25 tsp salt coarse
  • 1 cardamom pod cracked open and seeds removed
  • 0 vanilla bean thinly sliced
  • 4 ramekins Maple Pudding Cake ideally still warm
  • 1.5 cups heavy cream whipped

Instructions

  1. Place the quartered or sixths plums in a large bowl.
  2. In a small bowl, combine the sugar, salt, cardamom seeds, and vanilla bean. With your fingers, rub the sugar and spices together to bind the spice oils to the sugar-salt mixture.
  3. Add the sugar mixture to the plums. Toss to coat and set aside. Let sit for at least 10 minutes if you prefer juicier plums or just before serving for firmer fruit.
  4. Top the individual maple pudding cakes with a herty dollop of whipped cream.
  5. Spoon the plums and some of their liquid over the whipped cream and maple pudding cakes. Serve immediately.
