Apricot Grilled Cheese Sandwich

Apricot Grilled Cheese Sandwich

Ingredients

  • 1 Tbsp butter divided
  • 1 slice dark pumpernickel bread
  • 4 oz Brie cheese
  • 2 pieces apricot pitted and cut into 1/2 in. wedges
  • 1 slice dark pumpernickel bread
  • 1 Tbsp butter remaining

Instructions

  1. Preheat the oven to 400°F.
  2. In a medium, ovenproof frying pan, warm 1 tablespoon of butter over medium heat until melted and foamy.
  3. Place one slice of pumpernickel in the butter and fry for 30 seconds.
  4. Layer 4 ounces of sliced Brie cheese and apricot wedges evenly across the fried bread.
  5. Top with a second slice of pumpernickel bread and press firmly to ensure good contact.
  6. Flip the sandwich over, add the remaining tablespoon of butter to the pan, and swirl for about 30 seconds.
  7. Place the whole pan in the oven and bake until the Brie is melted and the bread is crispy, about 6 minutes.
  8. Remove from the oven, cut the sandwich in half, and enjoy while warm.
