Apricot Grilled Cheese Sandwich

Ingredients
- 1 Tbsp butter divided
- 1 slice dark pumpernickel bread
- 4 oz Brie cheese
- 2 pieces apricot pitted and cut into 1/2 in. wedges
- 1 slice dark pumpernickel bread
- 1 Tbsp butter remaining
Instructions
- Preheat the oven to 400°F.
- In a medium, ovenproof frying pan, warm 1 tablespoon of butter over medium heat until melted and foamy.
- Place one slice of pumpernickel in the butter and fry for 30 seconds.
- Layer 4 ounces of sliced Brie cheese and apricot wedges evenly across the fried bread.
- Top with a second slice of pumpernickel bread and press firmly to ensure good contact.
- Flip the sandwich over, add the remaining tablespoon of butter to the pan, and swirl for about 30 seconds.
- Place the whole pan in the oven and bake until the Brie is melted and the bread is crispy, about 6 minutes.
- Remove from the oven, cut the sandwich in half, and enjoy while warm.
