Korean-Inspired Sirloin Steak with Sesame Ginger Rice and Pickled Vegetables

Ingredients

  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon honey
  • 1 tablespoon rice vinegar
  • 2 cloves garlic minced
  • 1 teaspoon ginger grated
  • 0.5 teaspoon black pepper
  • 2 steaks sirloin steaks about 8-10 ounces each
  • 0.25 cup rice vinegar
  • 1 tablespoon sugar
  • 0.5 teaspoon salt
  • 0.25 cup water
  • 0.5 cup carrots julienned
  • 0.5 cup cucumber thinly sliced
  • 0.5 cup radishes thinly sliced
  • 1 cup jasmine or basmati rice
  • 2 cups water
  • 1 tablespoon sesame oil
  • 1 tablespoon soy sauce
  • 1 teaspoon ginger grated
  • 1 tablespoon sesame seeds
  • 2 tablespoons green onions sliced

Instructions

  1. In a small bowl, whisk together the soy sauce, sesame oil, honey, rice vinegar, minced garlic, grated ginger, and black pepper.
  2. Place the sirloin steaks in a shallow dish or a resealable plastic bag. Pour the marinade over the steaks, ensuring they are well-coated. Let the steaks marinate for at least 15-20 minutes, or up to 2 hours in the refrigerator.
  3. In a small saucepan, combine the rice vinegar, sugar, salt, and water. Bring the mixture to a simmer, stirring until the sugar is dissolved.
  4. Place the julienned carrots, sliced cucumber, and radishes in a heatproof bowl or jar. Pour the hot vinegar mixture over the vegetables.
  5. Let the vegetables sit for at least 15 minutes to pickle. They can be prepared in advance and refrigerated for up to a week.
  6. In a medium saucepan, combine the rice and water. Bring to a boil, then reduce the heat to low, cover, and simmer for about 15 minutes, or until the rice is cooked and the water is absorbed.
  7. In a small bowl, mix the sesame oil, soy sauce, and grated ginger. Once the rice is done, fluff it with a fork and stir in the sesame oil mixture. Sprinkle with sesame seeds and sliced green onions.
  8. Heat a grill pan or skillet over medium-high heat. Remove the steaks from the marinade and pat them dry with paper towels.
  9. Sear the steaks for 3-4 minutes on each side for medium-rare, or until they reach your desired level of doneness. Let the steaks rest for 5 minutes before slicing.
  10. Slice the steak against the grain and serve it over a bed of sesame ginger rice.
  11. Add a side of pickled vegetables for a tangy, refreshing contrast. Garnish with extra sesame seeds and green onions if desired.
