Dark Chocolate Flax Bark
Crunchy and seedy flax crackers, topped with dark chocolate and a touch of sea salt, make for a perfect sweet and salty snack. Ingredients
- 1.5 cups Brown Flaxseed
- 0.5 cup raw shelled sunflower seeds and/or pumpkin seeds
- 2 tsp vanilla extract
- 1 tsp kosher salt
- 0.25 cup vegetable oil
- 0.75 cup boiling water
- 1 cup semisweet or bittersweet chocolate chips
- 0 flaky sea salt
Instructions
- Preheat the oven to 325° and place a rack in the middle.
- Pulse 1.5 cups of brown flaxseed in a blender until about a third are cracked into a flour-like consistency.
- Transfer the pulsed flaxseed to a large bowl and mix in 0.5 cup of raw shelled sunflower seeds and/or pumpkin seeds, 2 tsp. of vanilla extract, 1 tsp. of Diamond Crystal or 0.5 tsp. of Morton kosher salt, 0.25 cup of vegetable oil, and 0.75 cup of boiling water.
- Let the mixture sit for 10 minutes to thicken.
- Pour mixture onto a parchment-lined baking sheet and spread into a thin layer using an offset spatula lightly coated with oil.
- Bake the cracker base in the preheated oven for 45-50 minutes, or until crisp in the center and the surface is golden.
- Pour 1 cup of melted, slightly cooled semisweet or bittersweet chocolate chips over the cracker and spread into a thin layer with an offset spatula.
- Let the chocolate-topped cracker sit until partially set, about 1 hour.
- Sprinkle with flaky sea salt, crushed freeze-dried fruit of choice, and/or chopped unsalted roasted nuts of choice, then let it set until the chocolate is completely set, about 1 more hour.
- Break the flax bark into pieces.
