Air Fryer Bang Bang Shrimp

Ingredients

  • 6 Tbsp. mayonnaise
  • 3 Tbsp. sriracha
  • 3 Tbsp. Thai chili sauce
  • 1 tsp. lime zest
  • 1 Tbsp. lime juice
  • 1 to taste kosher salt
  • 3 Tbsp. cornstarch
  • 1 large egg
  • 1 tsp. kosher salt
  • 1.67 cups panko breadcrumbs
  • 3 Tbsp. vegetable oil
  • 1 lb. extra-large shrimp
  • 3 Tbsp. cornstarch
  • 1 portion egg mixture
  • 1 portion panko mixture
  • 0.5 portion coated shrimp
  • 0.5 portion remaining shrimp
  • 1 portion bang bang sauce
  • 1 scallion

Instructions

  1. In a small bowl, combine 6 tablespoons of mayonnaise, 3 tablespoons of sriracha, 3 tablespoons of Thai chili sauce, 1 teaspoon of finely grated lime zest, and 1 tablespoon of fresh lime juice; season with salt to taste.
  2. Place 3 tablespoons of cornstarch in a large shallow bowl.
  3. In another large shallow bowl, whisk 1 large egg and 1 teaspoon of salt.
  4. In a third shallow bowl, stir 1 2/3 cups of panko breadcrumbs with 3 tablespoons of vegetable oil.
  5. Toss 1 pound of peeled, deveined extra-large shrimp in the cornstarch, then dip in the egg mixture, allowing any excess to drip off.
  6. Toss shrimp in the panko mixture, gently pressing to adhere the crumbs.
  7. Preheat the air fryer to 400°F (204°C) for 5 minutes.
  8. Place half of the shrimp in the air fryer basket in a single layer.
  9. Cook shrimp at 400°F (204°C) for about 8 minutes, or until they are crispy, golden brown, and firm to the touch.
  10. Transfer cooked shrimp to a paper towel-lined plate to drain.
  11. Repeat the cooking process with the remaining shrimp.
  12. Transfer all cooked shrimp to a large bowl and add the bang bang sauce. Toss to coat.
  13. Sprinkle 1 sliced scallion over the coated shrimp for garnish.
