Bacon Egg & Cheese Biscuit Casserole

Ingredients
- 10 slices bacon
- 10 slices bacon
- 10 large eggs
- 1.5 cups milk
- 1 cup shredded mozzarella
- 0.25 cup chives
- 1 pinch crushed red pepper flakes
- 0.75 tsp kosher salt
- 0.5 tsp freshly ground black pepper
- 1 pump cooking spray
- 10 slices bacon
- 8 slices American cheese
- 16.3 oz biscuit dough
- 2 Tbsp unsalted butter
- 2 Tbsp unsalted butter
Instructions
- Arrange a rack in the center of the oven and preheat to 375°F.
- Line a baking sheet with foil and arrange the bacon slices in a single layer.
- Bake the bacon in the oven until it's golden and crispy, about 20 to 25 minutes.
- In a large bowl, whisk together the eggs and milk until combined.
- Add the shredded mozzarella, chives, and a pinch of crushed red pepper flakes to the egg mixture. Season with salt and black pepper.
- Grease a 13" x 9" baking dish with cooking spray.
- Pour the egg mixture into the prepared baking dish.
- Lay the crispy bacon slices across the top of the egg mixture in a single layer.
- Top the bacon with American cheese slices, ensuring full coverage.
- Place one biscuit from the tube onto each slice of cheese.
- Brush the tops of the biscuits with some melted butter, reserving the remainder.
- Bake the casserole uncovered until the biscuits start to turn golden, about 20 minutes.
- Loosely cover the dish with foil and continue to bake until the center looks set and the biscuits are golden brown, another 20 to 25 minutes.
- Remove the foil and brush the biscuits with the remaining melted butter. Let the casserole cool for 10 minutes before slicing.
