Bacon Egg & Cheese Biscuit Casserole

Ingredients

  • 10 slices bacon
  • 10 slices bacon
  • 10 large eggs
  • 1.5 cups milk
  • 1 cup shredded mozzarella
  • 0.25 cup chives
  • 1 pinch crushed red pepper flakes
  • 0.75 tsp kosher salt
  • 0.5 tsp freshly ground black pepper
  • 1 pump cooking spray
  • 10 slices bacon
  • 8 slices American cheese
  • 16.3 oz biscuit dough
  • 2 Tbsp unsalted butter
  • 2 Tbsp unsalted butter

Instructions

  1. Arrange a rack in the center of the oven and preheat to 375°F.
  2. Line a baking sheet with foil and arrange the bacon slices in a single layer.
  3. Bake the bacon in the oven until it's golden and crispy, about 20 to 25 minutes.
  4. In a large bowl, whisk together the eggs and milk until combined.
  5. Add the shredded mozzarella, chives, and a pinch of crushed red pepper flakes to the egg mixture. Season with salt and black pepper.
  6. Grease a 13" x 9" baking dish with cooking spray.
  7. Pour the egg mixture into the prepared baking dish.
  8. Lay the crispy bacon slices across the top of the egg mixture in a single layer.
  9. Top the bacon with American cheese slices, ensuring full coverage.
  10. Place one biscuit from the tube onto each slice of cheese.
  11. Brush the tops of the biscuits with some melted butter, reserving the remainder.
  12. Bake the casserole uncovered until the biscuits start to turn golden, about 20 minutes.
  13. Loosely cover the dish with foil and continue to bake until the center looks set and the biscuits are golden brown, another 20 to 25 minutes.
  14. Remove the foil and brush the biscuits with the remaining melted butter. Let the casserole cool for 10 minutes before slicing.
