Boursin Omelet With Sour Cream & Onion Potato Chips
This delicious omelet combines creamy Boursin cheese and crunchy sour cream & onion potato chips for a savory delight inspired by the hit TV show 'The Bear'.

Ingredients
- 3 pcs large eggs
- 0.5 tsp kosher salt
- 2 tbsp Boursin Garlic & Fine Herbs Cheese
- 1 tsp water
- 1 tbsp unsalted butter
- 0.5 tsp white pepper
- 1 tsp unsalted butter
- 1 handful ruffled sour cream & onion potato chips
- 2 tbsp sliced chives
Instructions
- Set a medium or large fine-mesh strainer over a medium bowl. Crack 3 large eggs into the strainer and beat with a fork until whites and yolks are uniform.
- Scrape the bottom of the strainer to ensure there’s no waste, then add a pinch of kosher salt to the eggs and briefly whisk to combine.
- In a small bowl, mix 2 tablespoons Boursin cheese with 1 teaspoon water, adding an additional teaspoon if needed, until smooth and combined.
- Transfer the Boursin to a quart-size resealable bag, pushing it about 1/4 inch from the bottom of the bag. Snip the corner of the bag with scissors.
- In an 8-inch nonstick skillet over medium heat, melt 1 tablespoon butter until foamy but not browned, then add the eggs and season with a pinch of white pepper.
- Using a rubber spatula or plastic fork, rapidly stir the eggs with one hand while shaking the pan with the other until the eggs resemble a soft scramble, for 1 to 2 minutes.
- Spread the eggs in an even layer using the spatula, scraping down excess from the sides.
- Remove the pan from heat and pipe the Boursin down the center of the eggs, or use a spoon to place dollops of Boursin.
- Slightly tip the skillet away and start folding the eggs over themselves from the side closest to you, until they cover the Boursin.
- Roll or slide the omelet onto a plate, seam side down. Brush with the remaining 1 teaspoon butter.
- Top with a handful of crushed ruffled sour cream & onion potato chips and sliced chives.
