Classic Tomato Toast With Mayonnaise And Chives

Ingredients
- 6 tablespoons mayonnaise
- 0.25 cup fresh chives
- 6 tablespoons mayonnaise
- 2 tablespoons fresh chives
- 6 slices white bread
- 6 tablespoons chive-mayonnaise mixture
- 6 slices toasted white bread
- 1 pound very ripe multicolored tomatoes
- 1 pound sliced multicolored tomatoes
- 6 slices toasted bread with chive-mayonnaise
- 1.5 teaspoons kosher salt
- 1.5 teaspoons freshly ground black pepper
- 6 slices sliced tomatoes on toast
- 1 teaspoon sugar
- 2 tablespoons fresh chives
Instructions
- Measure 6 tablespoons of mayonnaise and add it to a small mixing bowl.
- Coarsely chop 1/4 cup of fresh chives. Set aside 2 tablespoons for garnish.
- Add the remaining chives (2 tablespoons) to the mayonnaise and mix well to combine.
- Toast 6 slices of white bread until golden brown.
- Using a knife or a spatula, spread 1 heaping tablespoon of the chive-mayonnaise mixture evenly onto each slice of toasted bread.
- Slice 1 pound of very ripe multicolored tomatoes into 1/4-inch thick slices.
- Divide the tomato slices evenly among the toast slices, placing them over the chive-mayonnaise.
- Sprinkle 1 1/2 teaspoons of kosher salt and 1 1/2 teaspoons of freshly ground black pepper evenly over the tomato slices.
- Optional: Sprinkle 1 teaspoon of sugar over the tomato slices if desired, for added sweetness.
- Garnish each toast with the reserved 2 tablespoons of chives.
