Broccoli Cheddar Beef Bowls

Ingredients

  • 1 lb 1 lb ground beef
  • 0.5 tsp ½ tsp salt
  • 0.25 tsp ¼ tsp black pepper
  • 0.5 tsp ½ tsp garlic powder
  • 1 tsp 1 tsp butter
  • 0.5 ½ medium onion, diced
  • 1 1 medium carrot, grated
  • 4 cloves 4 cloves garlic, minced
  • 2.5 cups 2½ cups broccoli florets, chopped small
  • 0.5 cup ½ cup milk
  • 2 cups 2 cups heavy whipping cream
  • 1 tsp 1 tsp Dijon mustard
  • 0.5 tsp ½ tsp salt
  • 1 tsp 1 tsp garlic powder
  • 1 tsp 1 tsp smoked paprika
  • 0.25 tsp ¼ tsp black pepper
  • 2 cups 2 cups sharp cheddar cheese, freshly shredded shredded
  • 1 cup 1 cup Colby Jack cheese, freshly shredded
  • 0 Cooked white rice or pasta, for serving
  • 0 Extra cheddar cheese, for garnishing

Instructions

  1. In a large skillet over medium heat, cook 1 lb ground beef with ½ tsp salt, ¼ tsp black pepper, and ½ tsp garlic powder until browned.
  2. Remove the browned beef from skillet and set it aside.
  3. In the same skillet, melt 1 tsp of butter.
  4. Add ½ medium onion, diced, 1 medium carrot, grated, and 4 cloves garlic, minced to the skillet. Sauté for 3 minutes until softened.
  5. Stir in 2½ cups of chopped small broccoli florets to the skillet and cook for 4–5 minutes, until slightly tender.
  6. Return the set aside beef to the skillet. Pour in ½ cup milk and 2 cups heavy whipping cream and stir well.
  7. Let the mixture simmer for 5–6 minutes, stirring occasionally, until slightly thickened.
  8. Stir in 1 tsp Dijon mustard, another ½ tsp salt, another 1 tsp garlic powder, 1 tsp smoked paprika, and another ¼ tsp black pepper.
  9. Reduce heat to low. Gradually add 2 cups of shredded sharp cheddar cheese and 1 cup of shredded Colby Jack cheese in small handfuls, stirring after each addition until completely melted and smooth.
  10. Finally, spoon the cheesy broccoli beef mixture over bowls of hot cooked rice or pasta, garnish with extra cheddar cheese, and serve immediately.
