Prawn Pad See Ew
This is one of the greatest Thai recipes ever, Prawn Pad See Ew, a very simple noodle stir-fry with charred chewy rice noodles, juicy prawns, egg and greens in a lovely salty sauce. It serves as a quick and easy dinner.

Ingredients
- 200 g large flat dried rice noodles
- 150 g choi sum/pak choi/ Chinese broccoli
- 2 tbsp neutral oil
- 200 g raw peeled king prawns
- 4 cloves garlic
- 3 eggs
- 4 tbsp oyster sauce
- 2 tbsp dark soy sauce
- 1 tbsp fish sauce
- 1 lime wedges
- 1 tbsp chilli flakes
Instructions
- Cover the dry noodles in boiling water and soak for 8 minutes until al dente.
- Drain the noodles and rinse well with cold water.
- Cut the stalks of the greens into little pieces and leave the leaves whole.
- Heat the oil in a wok over high heat.
- Add the prawns and stir-fry for 1-2 minutes or until cooked through. Remove and set to one side.
- Add the garlic to the wok and stir-fry for 10 seconds.
- Add the stalks from the greens to the wok and stir-fry for 1-2 minutes until tender.
- Next, add the whisked eggs, leave for 10 seconds, then stir-fry for 30 seconds or until set.
- Add the noodles and the leaves to the wok and stir-fry for 2-3 minutes until they start to wilt.
- Add the prawns, oyster sauce, soy sauce, and fish sauce to the wok and continue to stir-fry until everything is coated.
- Transfer to a serving dish and serve immediately with chilli and lime on the side.
