Ingredients

  • 1 ripe banana
  • 2 large eggs
  • 1 scoop vanilla protein powder
  • 0.25 teaspoon baking powder
  • 0.25 teaspoon ground cinnamon optional
  • 0 cooking spray or a little butter for the pan
  • 0 fresh fruit optional (berries, banana slices, etc.)
  • 0 maple syrup or honey, optional
  • 0 greek yogurt optional

Instructions

  1. In a mixing bowl, mash the ripe banana until smooth using a fork.
  2. Add the eggs to the mashed banana and whisk together until well combined.
  3. Stir in the protein powder, baking powder, and ground cinnamon (if using) until the batter is smooth. If the batter is too thick, add a splash of water or milk to thin it out slightly.
  4. Heat a non-stick skillet or griddle over medium heat and lightly coat with cooking spray or butter.
  5. Pour small amounts of batter onto the skillet to form pancakes (about 2-3 tablespoons of batter per pancake). Cook for about 2-3 minutes on each side, or until bubbles form on the surface and the edges start to set. Flip and cook for another 1-2 minutes until golden brown and cooked through.
  6. Stack the pancakes on a plate and add your favorite toppings such as fresh fruit, a drizzle of maple syrup, or a spoonful of Greek yogurt.
