Ingredients
- 1 ripe banana
- 2 large eggs
- 1 scoop vanilla protein powder
- 0.25 teaspoon baking powder
- 0.25 teaspoon ground cinnamon optional
- 0 cooking spray or a little butter for the pan
- 0 fresh fruit optional (berries, banana slices, etc.)
- 0 maple syrup or honey, optional
- 0 greek yogurt optional
Instructions
- In a mixing bowl, mash the ripe banana until smooth using a fork.
- Add the eggs to the mashed banana and whisk together until well combined.
- Stir in the protein powder, baking powder, and ground cinnamon (if using) until the batter is smooth. If the batter is too thick, add a splash of water or milk to thin it out slightly.
- Heat a non-stick skillet or griddle over medium heat and lightly coat with cooking spray or butter.
- Pour small amounts of batter onto the skillet to form pancakes (about 2-3 tablespoons of batter per pancake). Cook for about 2-3 minutes on each side, or until bubbles form on the surface and the edges start to set. Flip and cook for another 1-2 minutes until golden brown and cooked through.
- Stack the pancakes on a plate and add your favorite toppings such as fresh fruit, a drizzle of maple syrup, or a spoonful of Greek yogurt.
