Golden Saffron Sauce
Golden saffron sauce 💛💫🧈 I first tried silky, saffron pasta sauce during one of my trips to Savannah, GA- the most unassuming little Italian restaurant on the outskirts of the historic district, called Frali Gourmet!! Literally still to this day, one of my favorite pasta dishes in the country. We didn't make it to visit Savannah this year because of our trip to Italy and I'm missing it so bad right now...had to make my own version at home. This saffron pasta is buttery, lemony, and feels super pretty and fancy — but it's SO simple and easy.

Ingredients
- 0.5 lb pasta
- 3 tbsp butter
- 2 cloves garlic
- 0.5 tsp lemon zest
- 0.5 tsp saffron threads
- 0.25 cup white wine
- 0.5 cup heavy cream
- 0.25 cup Parmesan cheese
Instructions
- Bring a large pot of salted water to a boil.
- Add 1/2 lb of pasta to the boiling water and cook according to package directions until al dente.
- Drain the pasta, reserving some of the pasta water.
- Melt 3 tbsp of butter in a pan over medium heat.
- Add 2 grated garlic cloves, 1/2 tsp lemon zest, and 1/2 tsp crushed saffron threads to the melted butter.
- Pour in 1/4 cup of white wine to deglaze the pan.
- Let the wine reduce while simmering for about 2-3 minutes.
- Add 1/2 cup of heavy cream to the pan.
- Let the sauce bubble and simmer for a few minutes on low heat until it thickens slightly and becomes silky.
- Add the cooked pasta to the sauce in the pan.
- Pour in some of the reserved pasta water to achieve the desired consistency.
- Stir gently until the pasta is fully coated and the sauce is glossy.
- Serve the pasta in bowls and top with grated Parmesan cheese.
