- 2 tablespoons parsley
- 4 pita bread
- 1 cup lettuce
- 0.5 red onions
- 1 cup cherry tomatoes
- 0.5 cup feta cheese
- 1 cup tzatziki sauce
Instructions
- Grate 1/2 cucumber and remove excess water by squeezing it in a napkin or with your hands.
- In a bowl, mix 1 cup plain Greek yogurt, the grated cucumber, 2 minced garlic cloves, 1 tablespoon lemon juice, 1 tablespoon dill, 1 tablespoon olive oil, and 1/2 teaspoon salt and pepper to make the tzatziki sauce.
- Add 2 tablespoons olive oil to a pan on medium-low heat. Once heated, add 4-5 minced garlic cloves and 1/2 diced onion, sautéing for 1 to 2 minutes or until soft.

- Drain excess fat from the beef mixture.
- Add 2 cups of sliced mushrooms to the beef mixture. Stir and cook for a few minutes until the mushrooms are golden brown.
- Stir in 1 teaspoon of salt, black pepper, oregano, cumin, paprika or cayenne, and 2 tablespoons chopped parsley. Mix well and remove from heat.
- Heat pita bread in a pan or oven until warm.
- Stuff the warm pita bread with the beef and mushroom mixture.
- Top with shredded lettuce, sliced red onions, cherry tomatoes, and crumbled feta cheese.
- Add a generous dollop of tzatziki sauce over the toppings.
