Street Corn Smash Burger Tacos

Ingredients

  • 2 ears corn
  • 1 cup grilled corn kernels
  • 0.25 cup mayonnaise
  • 0.25 cup feta cheese
  • 0.25 cup cotija cheese
  • 0.25 cup fresh cilantro
  • 1 tablespoon lime juice
  • 2 cloves fresh garlic
  • 1 teaspoon chili powder
  • 0.5 teaspoon kosher salt
  • 0.25 cup chopped red onions
  • 1 lb ground beef
  • 8 pieces ground beef patties
  • 8 slices sliced cheese
  • 8 pieces tortillas
  • 0.5 cup burger sauce
  • 0.5 cup shredded lettuce
  • 0.25 cup burger pickles

Instructions

  1. Preheat your grill or stove-top grill pan over medium-high heat.
  2. Grill 2 ears of sweet corn until charred, about 8-10 minutes, turning occasionally.
  3. Using a sharp knife, carefully cut the kernels off the cob.
  4. In a large bowl, combine the grilled corn, 1/4 cup mayonnaise, 1/4 cup feta cheese, 1/4 cup cotija cheese, 1/4 cup chopped fresh cilantro, 1 tablespoon lime juice, 2 cloves minced fresh garlic, 1 teaspoon chili powder, 1/2 teaspoon kosher salt, and 1/4 cup chopped red onions.
  5. In a separate bowl, prepare 1 lb of ground beef by dividing it into 8 equal portions and form them into small balls.
  6. Heat a large skillet or griddle over medium-high heat.
  7. Place the meatballs on the hot skillet and immediately smash each one flat using a spatula. Cook for 2-3 minutes until the edges brown and juices begin to show.
  8. Flip the patties and place a slice of cheese on top of each. Cook for an additional 1-2 minutes until the cheese is melted and the patties are cooked through.
  9. Warm 8 street taco sized tortillas on a griddle or skillet over medium heat for about 30 seconds on each side.
  10. To assemble, place a patty onto each warm tortilla. Top with a generous spoonful of the street corn salad and a small amount of burger sauce.
  11. Garnish with optional toppings like shredded lettuce and burger pickles before serving.
