Sweet and Spicy Chicken Stir-Fry with Sesame Rice

Ingredients
- 1 cup jasmine rice
- 1.25 cups water
- 1 tablespoon sesame oil
- 1 tablespoon sesame seeds
- 1 tablespoon soy sauce
- 1 tablespoon chopped fresh cilantro optional
- 2 tablespoons vegetable oil
- 1 pound boneless, skinless chicken thighs or breasts cut into bite-sized pieces
- 1 red bell pepper sliced
- 1 yellow bell pepper sliced
- 1 cup broccoli florets
- 1 cup snap peas or green beans
- 3 cloves garlic minced
- 1 tablespoon fresh ginger grated
- 0.25 cup soy sauce
- 2 tablespoons honey
- 1 tablespoon sriracha or your favorite hot sauce
- 1 tablespoon rice vinegar
- 0 cornstarch mixed with water 1 tablespoon cornstarch mixed with 2 tablespoons water
- 0 sesame seeds for garnish
- 0 green onions sliced, for garnish
Instructions
- Rinse the rice under cold water until the water runs clear. In a medium saucepan, bring the water to a boil.
- Stir in the rice, reduce the heat to low, cover, and simmer for 15-18 minutes, or until the rice is cooked and the water is absorbed.
- Fluff the rice with a fork, then stir in sesame oil, sesame seeds, soy sauce, and chopped cilantro or parsley if using. Keep warm.
- Heat vegetable oil in a large skillet or wok over medium-high heat. Add the chicken pieces and cook, stirring occasionally, until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
- In the same skillet, add the bell peppers, broccoli, and snap peas. Stir-fry for about 3-4 minutes until the vegetables are crisp-tender.
- Add the minced garlic and grated ginger to the skillet and cook for an additional minute until fragrant. Return the chicken to the skillet.
- In a small bowl, whisk together soy sauce, honey, sriracha, rice vinegar, and cornstarch mixture. Pour this sauce over the chicken and vegetables. Stir well and cook for another 2-3 minutes until the sauce thickens and everything is coated.
- Spoon the sesame rice onto plates or bowls. Top with the sweet and spicy chicken stir-fry. Garnish with sesame seeds and sliced green onions if desired. Enjoy!
