  • 1 tablespoon fresh parsley finely chopped
  • 1 tablespoon fresh thyme leaves or 1/2 teaspoon dried thyme
  • 1 teaspoon garlic powder
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper freshly ground
  • 2 large eggs
  • 2 medium zucchinis cut into sticks
  • 0 olive oil spray or drizzle
  • 0 marinara sauce optional for dipping
  • 0 ranch dressing optional for dipping

Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it.
  2. In a shallow bowl, mix the Parmesan cheese, breadcrumbs, parsley, thyme, garlic powder, salt, and pepper.
  3. In another bowl, beat the eggs.
  4. Dip each zucchini stick into the beaten eggs, allowing the excess to drip off. Then, roll the zucchini in the Parmesan and breadcrumb mixture, pressing gently to adhere. Place the coated zucchini sticks on the prepared baking sheet in a single layer.
