Cowboy Butter Spaghetti
A flavorful spaghetti recipe with a rich, buttery sauce featuring shallots, garlic, lemon, Dijon, and a variety of spices.

Ingredients
- 4 tablespoons Butter
- 2 Shallots, minced
- 5 cloves Garlic, minced
- 0.5 lemon Lemon juice and zest
- 2 teaspoons Dijon
- 1 teaspoon Smoked Paprika
- 1 teaspoon Garlic Powder
- 1 teaspoon Onion powder
- 0.5 teaspoon Cayenne
- 0.5 cup Heavy Cream
- 1 handful Chopped Parsley
- 1 pound Spaghetti
- 1 cup Pasta Water
- 1 pound Cooked Spaghetti
- 1 cup Reserved Pasta Water
- 1 to taste Parmigiano Reggiano
Instructions
- Melt 4 tablespoons of butter in a large pan over medium heat.
- Add 2 minced shallots to the pan and sauté until soft.
- Add 5 cloves of minced garlic to the pan and continue to sauté until fragrant.
- Stir in the juice and zest of half a lemon, along with 2 teaspoons of Dijon mustard.
- Add 1 teaspoon each of smoked paprika, garlic powder, and onion powder to the pan.
- Stir in ½ teaspoon of cayenne pepper.
- Pour in ½ cup of heavy cream and a handful of chopped parsley, stirring to combine.
- In a separate pot, cook 1 pound of spaghetti according to package instructions, reserving 1 cup of pasta water.
- Add the cooked spaghetti and reserved pasta water to the pan with the sauce, tossing to combine.
- Serve the spaghetti with a generous grating of Parmigiano Reggiano on top.
