Philadelphia Roast Pork Sandwiches

Ingredients
- 1.5 tablespoon fennel seeds
- 1.5 tablespoon minced rosemary leaves
- 1.5 tablespoon minced thyme leaves
- 0.5 teaspoon chili flakes
- 1.5 tablespoon dark brown sugar
- 2 tablespoon olive oil
- 3.5 pound boneless pork shoulder
- 1 pinch Sea salt
- 1 sprinkle Sea salt
- 0.75 cup mayo
- 2 cloves garlic cloves, minced
- 4.5 tablespoon finely chopped pepperoncini plus brine
- 1 pinch Sea salt
- 2 tablespoon olive oil
- 0.5 teaspoon chili flakes
- 5 cloves garlic cloves, very thinly sliced
- 1 pound broccoli rabe, ends trimmed and chopped
- 1 tablespoon fresh lemon juice
- 1 pinch Sea salt
- 6 rolls split sub-style rolls
- 12 slices provolone cheese
- 1 drizzle olive oil
Instructions
- Preheat your Traeger Grill to 450 degrees F & set a rack over a sheet tray.
- Toast fennel seeds until fragrant, then crush in a mortar & pestle.
- Combine fennel, rosemary, thyme, brown sugar, chili flakes, & a generous bit of salt, then coat the pork in olive oil & your spice rub.
- Insert a meater probe & let stand at room temp for 1 hour.
- Place on the grill, roast for 20 minutes, then decrease the temp to 300 degrees F and let cook until the pork reads an internal temp or 165 degrees F (about 2 hours).
- Wrap in foil & let rest for 20 minutes before carving into thin strips. Hit with a sprinkle of salt.
- In a bowl combine all your mayo ingredients, season with salt to taste, & mix well.
- Heat a skillet over medium heat, add olive oil, chili flakes and garlic, and cook for 1 minute.
- Add broccoli rabe, a pinch of salt, & cook until softened, about 4 minutes, then squeeze over lemon.
- Split your rolls, drizzle with olive oil, add cheese, then broil to melt.
- Top each with a slather of mayo, a generous portion of pork, broccoli rabe, & serve.
