Caramelized Tomato, Pesto & Feta Bread
Melty cheese, salty feta, and caramelised tomatoes all baked to perfection! This bread comes together so effortlessly with a bread maker - knead, rise, bake, done!

Ingredients
- 200 g ripe cherry tomatoes
- 1 sprig rosemary
- 1 Tbsp extra virgin olive oil
- 1 cup lukewarm water
- 2 Tbsp extra virgin olive oil
- 1 tsp instant active yeast
- 2.75 cups plain or high grade flour
- 2 tsp caster sugar
- 1.5 tsp fine table salt
- 75 g store-bought basil pesto
- 100 g tasty cheese, grated
- 25 g Parmesan, finely grated
- 125 g feta cheese
- 1 sprig rosemary
Instructions
- Prepare the caramelised tomatoes by cutting 1 punnet (200g) of ripe cherry tomatoes in half.
- Pick leaves from 1 sprig of rosemary.
- Drizzle the tomatoes with 1 Tbsp of extra virgin olive oil.
- Prepare the bread by combining 1 cup (250ml) of lukewarm water with 2 Tbsp of extra virgin olive oil.
- Add 1 tsp of instant active yeast to the mixture.
- Mix in 2 ¾ cups (400g) of plain or high grade flour, 2 tsp of caster sugar, and 1 ½ tsp of fine table salt.
- Add 75g of store-bought basil pesto to the mixture.
- Mix in 100g of tasty cheese, grated, and 25g of Parmesan, finely grated.
- Crumble 125g of feta cheese into the mixture.
- Optionally, pick leaves from another sprig of rosemary and add to the mixture.
