Double Chocolate Banana Bread

Ingredients

  • 3 large ripe bananas
  • 8 tbsp salted butter, melted
  • 0.5 cup granulated sugar
  • 0.5 cup light brown sugar
  • 1 large egg, room temp
  • 0.33 cup Sour cream or Greek yogurt, room temp
  • 1 tbsp vanilla bean paste
  • 1.33 cup all purpose flour
  • 1 tsp baking soda
  • 0.33 cup natural cocoa powder
  • 1 cup semi sweet chocolate chips

Instructions

  1. Preheat the oven to 350F.
  2. In a mixing bowl peel and mash the bananas finely until smooth and not lumpy.
  3. Add melted butter along with granulated sugar and brown sugar. Mix well for 2 min.
  4. Crack in the egg whisk for additional 2-3 min. Add sour cream, vanilla bean paste. Mix well and set aside
  5. In a separate bowl mix all purpose flour, baking soda and cocoa powder. Mix to combine.
  6. Slowly add dry mixture to the wet batter add in chocolate chips and fold to just combine. Do not over mix the bananas at this point.
  7. Line an loaf pan with parchment paper. Pour the batter in the pan and bake the bread for 1 hour or until the toothpick inserted comes out clean.
  8. Let cool completely before serving and enjoy.
