Linguini with Lemon, Zucchini, & Cherry Tomatoes
This Fresh Summer Pasta is a bright and zesty dish that's light yet full of flavor. The combination of lemon, zucchini, and cherry tomatoes with fresh herbs makes it a perfect meal for a summer evening. Pair it with a chilled glass of white wine or a light salad for a complete, refreshing dinner.

Ingredients
- 12 oz linguini pasta
- 4 cups water for boiling
- 1 tablespoon salt for boiling
- 2 tablespoons olive oil
- 2 cloves garlic minced
- 1 medium zucchini sliced into thin rounds
- 1 cup cherry tomatoes halved
- 0 lemon zest from 1 large lemon
- 0 lemon juice from 1 large lemon
- 0.25 teaspoon red pepper flakes optional, for a little heat
- 0 salt to taste
- 0 black pepper to taste
- 0.25 cup Parmesan cheese freshly grated
- 0.25 cup basil leaves torn
- 0.25 cup parsley chopped
- 1 handful arugula or baby spinach optional for extra greens
Instructions
- Bring a large pot of salted water to a boil. Cook the pasta according to the package instructions until al dente. Reserve about 1/2 cup of the pasta cooking water, then drain the pasta and set it aside.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute, until fragrant.
- Add the zucchini slices and cook for 3-4 minutes until they start to soften and turn golden.
- Add the cherry tomatoes and cook for another 2-3 minutes until they begin to soften and release their juices.
- Add the cooked pasta to the skillet with the vegetables. Toss everything together, adding the lemon zest, lemon juice, and red pepper flakes (if using). Season with salt and pepper to taste. If the pasta seems a bit dry, add a splash of the reserved pasta cooking water to help the sauce coat the pasta.
- Remove the skillet from the heat and stir in the freshly grated Parmesan cheese, fresh basil, and parsley. If you’re adding arugula or spinach, toss it in now, allowing it to wilt slightly from the residual heat.
- Divide the pasta among serving plates or bowls. Garnish with extra fresh herbs, a drizzle of olive oil, and more Parmesan cheese if desired. Serve immediately while the pasta is warm.
