Chocolate Rice Krispy Cookies

Ingredients

  • 0.5 cup unsalted butter softened
  • 0.5 cup granulated sugar
  • 0.5 cup brown sugar packed
  • 1 egg large
  • 1 teaspoon vanilla extract
  • 1.25 cups all-purpose flour
  • 0.5 teaspoon baking soda
  • 0.25 teaspoon baking powder
  • 0.25 teaspoon salt
  • 1.5 cups Rice Krispies cereal
  • 1 cup chocolate chips
  • 1 tablespoon coconut oil optional
  • 0 parchment paper for setting dipped cookies

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in the egg and vanilla extract until well combined.
  4. In a separate bowl, whisk together the flour, baking soda, baking powder, and salt.
  5. Gradually add the dry ingredients to the butter mixture, mixing until just combined.
  6. Gently fold in the Rice Krispies cereal, being careful not to crush them too much.
  7. Using a cookie scoop or a tablespoon, drop rounded balls of dough onto the prepared baking sheet, spacing them about 2 inches apart. Gently press down on each ball of dough to flatten it slightly.
  8. Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden. Remove the cookies from the oven and allow them to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
  9. In a microwave-safe bowl, combine the chocolate chips and coconut oil (if using). Microwave in 30-second intervals, stirring between each, until the chocolate is fully melted and smooth.
  10. Once the cookies are completely cool, dip each one halfway into the melted chocolate, allowing the excess to drip off. Place the dipped cookies on a sheet of parchment paper or a wire rack to set.
  11. Let the cookies sit at room temperature until the chocolate is set. If you're in a hurry, you can place them in the refrigerator for 10-15 minutes to speed up the process.
