Ingredients

  • 1 cup flour
  • 1 tsp baking powder
  • 0.25 tsp baking soda
  • 0.25 tsp salt
  • 1 tbsp olive oil
  • 2 tbsp sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 0.5 cup milk
  • 0.25 cup chocolate chips
  • 0 butter for greasing
  • 0 maple syrup for serving
  • 0 chocolate chips a handful for serving

Instructions

  1. In a large bowl, combine flour, baking powder, baking soda, and salt.
  2. In another bowl, whisk together olive oil and sugar until combined. Add in eggs, vanilla extract, and milk. Whisk until smooth.
  3. Create a well in the dry ingredients. Pour in the wet ingredients and fold together until just combined. Do not over-mix; some lumps are fine.
  4. Gently fold in the chocolate chips into the batter.
  5. Let the batter sit for a few minutes while you preheat a griddle or pan over medium heat. Grease the griddle/pan with some butter.
  6. Add batter 1/4 cup at a time onto the griddle/pan. Cook for 2-3 minutes until bubbles form on the surface, then flip and cook for another 1-2 minutes until golden brown.
  7. Serve the pancakes warm with some maple syrup and an extra handful of chocolate chips if desired. Enjoy!
