Grilled Halloumi & Salmon Salad
A fresh and hearty salad made with mixed greens, savory grilled halloumi, grilled salmon, avocado, tomatoes, and a lemony herb dressing.

Ingredients
- 250 grams halloumi cheese
- 500 grams salmon fillet
- 2 tablespoons olive oil
- 1 teaspoon salt
- 0.5 teaspoon black pepper

- 1 large avocado
- 200 grams cherry tomatoes
- 2 tablespoons lemon juice
- 3 tablespoons olive oil

Instructions
- Preheat your grill or grill pan over medium-high heat.
- Slice the halloumi cheese into 1/2-inch thick slices.
- Cut the salmon fillet into 4 equal portions.
- Rub each salmon portion with olive oil and season with salt and pepper.
- Place the halloumi slices on the grill and cook for 2-3 minutes on each side until golden brown and grill marks appear.
- Grill the salmon portions skin-side down for 4-5 minutes, then flip and grill for an additional 3-4 minutes until cooked through.
- Wash and dry the mixed greens thoroughly.
- Dice the avocado into small, bite-sized pieces.
- Slice the cherry tomatoes in half.
- In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper to create the dressing.
- In a large salad bowl, combine the mixed greens, avocado, and cherry tomatoes. Drizzle with the lemon dressing and toss gently to combine.
- Arrange the grilled halloumi and salmon portions on top of the salad.
- Serve immediately while the salmon and halloumi are warm.
