Ingredients
- 0.5 jalapeño
- 1 pieces bacon
- 1 pieces bacon
- 0.5 cup shredded chicken
- 1 tbsp whipped cream cheese
- 0.5 jalapeño
- 0.25 cup shredded cheese
- 1 pieces bacon
- 0.25 tsp garlic powder
- 0.25 tsp paprika
- 0.25 tsp salt
- 0.25 tsp pepper
- 1 tbsp scallions
- 1 tsp oil
- 2 tortillas
- 1 serving chicken jalapeño mixture
- 2 filled tortillas
- 1 tbsp scallions
- 2 tbsp ranch dressing
Instructions
- Using a sharp knife, finely chop 1/2 jalapeño, removing seeds if you prefer less heat.
- Chop 1-2 pieces of bacon into small pieces using a knife or kitchen scissors.
- Heat a pan over medium heat and cook the chopped bacon until crispy. Remove and drain on paper towels.
- In a bowl, mix 1/2 cup shredded chicken with 1 tablespoon whipped cream cheese, the chopped jalapeño, 1/4 cup shredded cheese, and the cooked bacon. Add a pinch of garlic powder, paprika, salt, and pepper.
- Chop 1 tablespoon of scallions.
- Lightly coat a pan with oil and heat over medium-high heat.
- Fill 2 tortillas with equal amounts of the chicken and jalapeño mixture. Fold the tortillas in half.
- Place the filled tortillas in the hot pan and cook for 2-3 minutes on each side, or until crispy and golden brown.
- Garnish with chopped scallions and serve immediately with ranch dressing on the side.
