Pork And Coleslaw Tortilla Wraps

Cook time: 15 minutes

Servings: 4

Ingredients

  • 2 teaspoons ginger
  • 2 cloves garlic
  • 1 pound ground pork
  • 0.33 cup Soyaki Sauce
  • 1 cup coleslaw
  • 1 teaspoon Chili Onion Crunch
  • 8 pieces mini flour tortillas
  • 2 tablespoons olive oil
  • 0 as needed cilantro
  • 0 as needed green onion
  • 0 as needed Trader Joe's Spicy Dynamite Sauce
  • 0 as needed lime juice

Instructions

  1. Grate 2 teaspoons of fresh ginger using a fine grater; set aside.
  2. Mince 2 garlic cloves finely and set aside.
  3. In a large bowl, combine 1 lb ground pork, 1/3 cup Soyaki Sauce, 2 teaspoons grated ginger, 2 minced garlic cloves, 1 cup coleslaw, and 1 teaspoon Chili Onion Crunch. Mix well until combined.
  4. Using a spoon, spread a heaping tablespoon of the pork mixture evenly over one side of each mini tortilla.
  5. Heat 2 tablespoons of olive oil in a skillet over medium heat until shimmering.
  6. Place the tortilla with the pork side down into the hot skillet and cook for 2-3 minutes until the pork is browned and the tortilla is golden and crispy.
  7. Flip the tortilla and cook on the other side for an additional 1 minute until the tortilla is crispy.
  8. Repeat the frying process until all tortillas are cooked. Place cooked tortillas on a paper towel-lined plate to drain excess oil.
  9. Garnish each cooked tortilla wrap with fresh cilantro leaves, sliced green onion, and drizzle with Trader Joe's Spicy Dynamite Sauce. Squeeze fresh lime juice over the top before serving.
