Instructions
- Grate 2 teaspoons of fresh ginger using a fine grater; set aside.
- Mince 2 garlic cloves finely and set aside.
- In a large bowl, combine 1 lb ground pork, 1/3 cup Soyaki Sauce, 2 teaspoons grated ginger, 2 minced garlic cloves, 1 cup coleslaw, and 1 teaspoon Chili Onion Crunch. Mix well until combined.
- Using a spoon, spread a heaping tablespoon of the pork mixture evenly over one side of each mini tortilla.
- Heat 2 tablespoons of olive oil in a skillet over medium heat until shimmering.
- Place the tortilla with the pork side down into the hot skillet and cook for 2-3 minutes until the pork is browned and the tortilla is golden and crispy.
- Flip the tortilla and cook on the other side for an additional 1 minute until the tortilla is crispy.
- Repeat the frying process until all tortillas are cooked. Place cooked tortillas on a paper towel-lined plate to drain excess oil.
