Cheesy Beef Enchilada Skillet

Ingredients

  • 1 lb ground beef
  • 0.5 tsp salt
  • 0.5 tsp pepper
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1 tsp dried cilantro
  • 1 whole onion
  • 1 tbsp minced garlic
  • 10 small white corn tortillas
  • 20 oz mild enchilada sauce
  • 1 cup Chihuahua cheese
  • 0.5 cup shredded Colby Jack cheese
  • 1 bunch cilantro
  • 1 dollop sour cream

Instructions

  1. Brown 1 lb of ground beef in a large oven safe skillet over medium-high heat, add all seasonings, and the onion.
  2. Let that cook until beef is cooked through and onions have softened. Drain any grease from the skillet.
  3. Add the minced garlic and the cut up white corn tortillas. Stir those around with the ground beef and add two cans of mild enchilada sauce. Add a handful of Chihuahua cheese and stir everything together well. Top with some shredded Colby Jack cheese.
  4. Place this in the oven at 400 degrees F until the cheese is melted. Top the plates with cilantro and sour cream. Enjoy!
