Healthy Chicken Nuggets

These chicken nuggets are absolutely delicious and healthier than any fast food restaurant! Made with simple ingredients and they even sneak in some hidden veggies. Easy to freeze and reheat, these are a must try for back to school time!

Healthy Chicken Nuggets

Cook time: 30 minutes

Servings: 4

Ingredients

  • 2 medium carrots, peeled
  • 1.5 lb ground chicken or turkey
  • 1 egg
  • 2 tbsp mayonnaise
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 0.5 tsp paprika
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 0.25 cup almond flour
  • 0.67 cup breadcrumbs of choice

Instructions

  1. Preheat oven to 425F and line a baking sheet with parchment paper.
  2. In a food processor or by hand, pulse the carrots until finely shredded.
  3. Add the chicken, egg, mayonnaise, spices, shredded carrots and almond flour to a large bowl. Using your hands, mix until fully combined.
  4. Divide into about 15-18 large nuggets by scooping 2-3 tbsp per nugget and shaping with your hands to about 1/2” thick.
  5. Coat both sides in the breadcrumbs pressing down to secure then transfer to the prepared baking sheet.
  6. Bake for 12 minutes, flip and bake an additional 12 minutes until cooked through.
  7. Broil for 2-3 minutes at the end for a more golden color.
  8. Serve with ketchup or your favorite sauce and enjoy!
  9. Keep in the fridge to 2-3 days or in the freezer for up to 2 months. Reheat in the oven at 425F until heated through.
