Guava Lemon Bars

Ingredients
- 2 cups all-purpose flour
- 0.5 cup powdered sugar
- 0.25 teaspoon salt
- 1 cup unsalted butter
- 4 large eggs
- 1 cup granulated sugar
- 1 tablespoon lemon zest
- 0.33 cup lemon juice
- 0.5 cup guava puree
- 1 tablespoon all-purpose flour
- 0.25 cup powdered sugar
Instructions
- Preheat your oven to 350°F (175°C) and adjust the oven rack to the middle position.
- Line a 9x13-inch baking dish with parchment paper, leaving an overhang on the sides.
- In a medium bowl, whisk together 2 cups of all-purpose flour, 1/2 cup of powdered sugar, and 1/4 teaspoon of salt.
- Cut 1 cup (two sticks) of unsalted butter into small cubes and mix into the flour mixture using a pastry cutter or your fingers until mixture resembles coarse crumbs.
- Press the mixture evenly into the prepared baking dish to form the crust.
- Bake the crust for 20-25 minutes, or until lightly golden brown.
- While the crust is baking, combine 4 large eggs, 1 cup granulated sugar, 1 tablespoon lemon zest, and 1/3 cup fresh lemon juice in a large bowl.
- Add 1/2 cup of guava puree and 1 tablespoon of all-purpose flour to the egg mixture and whisk until well combined.
- Pour the guava lemon filling over the hot baked crust, spreading evenly with a spatula.
- Bake for another 25-30 minutes, or until the filling is set and slightly golden around the edges.
- Remove from the oven and let the bars cool completely in the pan on a wire rack.
- Once cool, lift the bars out of the pan using the parchment overhang and cut into squares.
- Dust with powdered sugar before serving, if desired.
