Chicken Avocado Sandwich
A delightful sandwich featuring tender marinated chicken, creamy avocado, and flavorful lemon garlic aioli, all on crispy Kaiser rolls.

Ingredients
- 2 large chicken breasts

- 0.25 cup mayo
- 0.5 piece lemon

- 1 tablespoon butter
- 0.5 medium sweet onion
- 0.125 teaspoon salt
- 0.125 teaspoon pepper
- 0.5 medium sweet onion
- 1 tablespoon olive oil
- 1 batch marinated chicken
- 4 pieces Kaiser rolls
- 0.25 batch lemon garlic aioli
- 2 cups baby arugula
- 0.5 batch sautéed onions
- 1 batch cooked chicken
- 1 piece avocado
- 0.25 batch lemon garlic aioli
Instructions
- Using a meat mallet, pound the 2 large boneless, skinless chicken breasts to a 1/2-inch thickness.
- Slice each chicken breast into two pieces.
- In a bowl, mix the chicken with the juice of 1/2 a lemon, 2 tablespoons of olive oil, 2 teaspoons of chopped fresh oregano, 1 teaspoon of kosher salt, and 1/2 teaspoon of pepper.
- Cover and marinate the chicken for at least 30 minutes at room temperature or up to 4 hours in the refrigerator.
- In a small bowl, mix 1/4 cup mayo with the juice of 1/2 a lemon, 1 clove garlic (grated or minced), and a small pinch of salt and pepper to make the aioli.
- In a large pan over medium-low heat, melt 1 tablespoon butter. Add 1/2 a medium sweet onion, sliced into strips, with a sprinkle of salt and pepper.
- Cook the onions, stirring often, until tender and golden brown, approximately 8-10 minutes. Remove from the pan and set aside.
- Add 1 tablespoon olive oil to the pan and increase the heat to medium-high. Cook the marinated chicken for 4-5 minutes per side, or until the internal temperature reaches 165°F.
- Transfer the cooked chicken to a plate, cover it with foil, and let it rest while you toast the buns.
- Turn on the broiler in your oven. Place 4 Kaiser rolls, cut side up, on a baking sheet and toast for 1 to 2 minutes, or until golden and crisp.
- Spread the lemon garlic aioli on the bottom half of each toasted bun.
- Layer 2 cups of baby arugula evenly on the aioli-covered buns.
- Layer the sautéed onions on top of the arugula.
- Place the cooked chicken pieces over the onions, then top with slices from 1 avocado.
- Drizzle a little more aioli on top of the avocado and chicken, then place the top bun on the sandwich and enjoy your meal.
