Instructions

  1. Preheat your oven to 325°F (163°C).
  2. Crack the egg into a large mixing bowl. If using a flax egg, combine 1 tablespoon of ground flaxseed with 2.5 tablespoons of water and let it sit for 5 minutes to thicken.
  3. Add 1/3 cup of cashew butter, 1/4 cup of melted coconut oil, 3 tablespoons of maple syrup, 1 tablespoon of nondairy milk, and 1 teaspoon of vanilla extract to the bowl.
  4. Whisk the wet ingredients together until smooth and creamy.
  5. In a separate bowl, sift 1 cup of almond flour to remove any clumps, then add 1/4 cup of collagen peptides, 1/2 teaspoon of cinnamon, 1/4 teaspoon of baking soda, and 1/4 teaspoon of flaky salt.
  6. Add the dry ingredients to the wet ingredients and gently fold them together using a spatula until just combined.
  7. Fold in 1/2 cup of dairy-free dark chocolate and 1/2 cup of mini marshmallows into the dough until evenly distributed.
  8. Grease an 8–10-inch skillet with coconut oil or a non-stick spray, ensuring full coverage.
  9. Transfer the dough into the prepared skillet and use a spatula to smooth out the top into an even layer.
  10. Sprinkle additional chocolate, marshmallows, and a pinch of flaky salt over the top of the dough for extra flavor and presentation.
  11. Bake in the preheated oven for 18–20 minutes, until the edges are golden brown and the center is set.
  12. Switch the oven to broil for 1–2 minutes to toast the marshmallows to a golden brown, creating a classic s’mores look.
  13. Let the cookie skillet cool slightly before serving. Slice into bars for individual servings or spoon directly onto plates.
  14. Serve with a scoop of ice cream for an extra treat.
