Instructions
- Preheat your oven to 325°F (163°C).
- Crack the egg into a large mixing bowl. If using a flax egg, combine 1 tablespoon of ground flaxseed with 2.5 tablespoons of water and let it sit for 5 minutes to thicken.
- Add 1/3 cup of cashew butter, 1/4 cup of melted coconut oil, 3 tablespoons of maple syrup, 1 tablespoon of nondairy milk, and 1 teaspoon of vanilla extract to the bowl.
- Whisk the wet ingredients together until smooth and creamy.
- In a separate bowl, sift 1 cup of almond flour to remove any clumps, then add 1/4 cup of collagen peptides, 1/2 teaspoon of cinnamon, 1/4 teaspoon of baking soda, and 1/4 teaspoon of flaky salt.
- Add the dry ingredients to the wet ingredients and gently fold them together using a spatula until just combined.
- Fold in 1/2 cup of dairy-free dark chocolate and 1/2 cup of mini marshmallows into the dough until evenly distributed.
- Grease an 8–10-inch skillet with coconut oil or a non-stick spray, ensuring full coverage.
- Transfer the dough into the prepared skillet and use a spatula to smooth out the top into an even layer.
- Sprinkle additional chocolate, marshmallows, and a pinch of flaky salt over the top of the dough for extra flavor and presentation.
- Bake in the preheated oven for 18–20 minutes, until the edges are golden brown and the center is set.
- Switch the oven to broil for 1–2 minutes to toast the marshmallows to a golden brown, creating a classic s’mores look.
- Let the cookie skillet cool slightly before serving. Slice into bars for individual servings or spoon directly onto plates.
- Serve with a scoop of ice cream for an extra treat.
