Peach Coffee Cake

Ingredients

  • 0.5 cup all-purpose flour
  • 0.5 cup brown sugar
  • 0.5 tsp cinnamon
  • 5 tbsps unsalted butter
  • 1 cup granulated sugar
  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 0.5 tsp salt
  • 1 tbsp cinnamon
  • 1 egg
  • 1 cup whole milk
  • 0.33 cup unsalted butter
  • 1 peach
  • 0.25 cup granulated sugar
  • 0.5 cup brown sugar
  • 1 tbsp cinnamon
  • 4 tbsps unsalted butter
  • 0.5 cup powdered sugar
  • 1.5 tbsps whole milk

Instructions

  1. Preheat oven to 350 F (175 C).
  2. Grease and line an 8x8 inch baking pan with parchment paper.
  3. In a bowl, mix 1/2 cup all-purpose flour, 1/2 cup brown sugar, 1/2 tsp cinnamon, and 4-6 tbsps cold unsalted butter using your hands until crumbly. Refrigerate.
  4. In a medium bowl, combine 1 cup granulated sugar, 2 cups all-purpose flour, 1 tbsp baking powder, 1/2 tsp salt, and 1 tbsp cinnamon. Set aside.
  5. In a large bowl, beat 1 room temp egg, 1 cup whole milk, and 1/3 cup melted unsalted butter until just combined.
  6. Gradually add the dry mixture to the wet ingredients until just moist.
  7. Fold in 1 thinly sliced peach gently.
  8. Pour the batter into the prepared pan.
  9. In a small bowl, combine 1/4 cup granulated sugar, 1/2 cup brown sugar, 1 tbsp cinnamon, and 4 tbsps melted unsalted butter. Spoon over the batter and mix lightly.
  10. Sprinkle the chilled crumble topping over the batter.
  11. Bake for 60-70 minutes until a toothpick inserted in the center comes out clean.
  12. Let cake cool completely before slicing.
  13. In a small bowl, mix 1/2 cup powdered sugar with 1-2 tbsps whole milk to make icing. Drizzle over the cake.
