Ingredients
- 200 g cucumber
- 100 g radishes
- 50 g red onion

Instructions
- Using a sharp knife, chop the cucumber into bite-sized pieces, about 1-2 cm.
- Slice the radishes thinly using a mandoline or sharp knife.
- Thinly slice the red onion.
- In a large bowl, combine the chopped cucumber, sliced radishes, and red onion.
- Finely mince the parsley and add it to the bowl.
- Add a generous pinch of salt to the vegetable mixture, then squeeze in the juice of one lemon wedge and mix well.
- Finely mince the garlic clove.
- In a smaller bowl, combine the thick Greek yogurt, minced garlic, juice of another lemon wedge, and a pinch of salt. Mix well.
- Spread the seasoned yogurt mixture evenly on a large flat plate.
- Drain any excess liquid from the vegetable bowl, then drizzle with olive oil and mix well.
- Taste the vegetable mixture and adjust seasoning with additional salt or lemon juice if needed.
- Spoon the mixed vegetables on top of the yogurt, and drizzle with additional olive oil.
