Avocado Egg Roll Beef Bowls✨ A spin off of my favorite Avocado Egg Rolls. Packed with protein from a delicious ground beef base and then topped with a fresh and flavorful avocado, sun-dried tomato and cilantro mixture. And a creamy Tahini Dressing to top them off! So good.

Ingredients
- 4 pieces green onions
- 3 cloves garlic
- 2 cups green cabbage
- 1 tbsp avocado oil
- 1 lb ground beef

- 3 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tsp sesame oil
- 0.5 tsp ginger powder
- 3 large avocados
- 1 cup sun-dried tomatoes
- 0.5 cup red onion
- 0.25 cup cilantro
- 0.5 tsp salt
- 0.25 tsp pepper
- 0.25 cup tahini
- 1 piece lime
- 2 tsp sesame oil
- 0.5 tsp ginger powder
- 1 tsp honey
- 1 clove garlic
- 0.25 tsp salt
- 2 tbsp water
- 4 servings beef mixture
- 1 portion avocado mixture
- 1 portion tahini dressing
- 2 tbsp green onions
- 2 tbsp sesame seeds
Instructions
- Using a sharp knife, slice the white parts of 4 green onions.
- Mince 3 cloves of garlic using a garlic press or a knife.
- Shred enough green cabbage to make 2 cups.
- Heat a large skillet with about 1 tablespoon of avocado oil over medium heat until shimmering.
- Add 1 lb of ground beef to the skillet and cook, breaking up with a wooden spoon, until fully cooked.
- Add the sliced green onions and minced garlic to the skillet and sauté until fragrant, about 30 seconds.
- Stir in 2 cups of shredded cabbage and cook until slightly softened, about 2-3 minutes.
- Stir in 3 tbsp soy sauce, 1 tbsp rice vinegar, 1 tsp sesame oil, and 0.5 tsp ginger powder.
- Simmer on low heat while preparing the remaining ingredients. Add water if the mixture becomes too dry.
- Dice 2-3 large avocados and place them in a medium bowl.
- Chop 1 cup of sun-dried tomatoes in oil and add to the bowl with the avocados.
- Finely dice 0.5 cup red onion and chop 0.25 cup of cilantro and add to the mixture.
- Season the avocado mixture with 0.5 tsp salt and a pinch of pepper and toss gently.
- In a small bowl, whisk together 0.25 cup tahini, juice of 1 lime, 2 tsp sesame oil, 0.5 tsp ginger powder, 1 tsp honey, 1 grated clove of garlic, and 0.25 tsp salt.
- Add 2 tbsp water to thin the tahini dressing as needed.
- Divide the cooked beef mixture evenly into 4 bowls.
- Top the beef with the avocado filling mixture.
- Drizzle the tahini dressing over the top of each bowl.
- Garnish each bowl with green onions and sesame seeds.
