Marry Me Sausage Orzo

Ingredients
- 5 pieces chicken sausages
- 1 tablespoon olive oil
- 5 pieces chicken sausages
- 0.5 cup sundried tomatoes
- 1 cup orzo
- 500 ml water
- 1 cup orzo
- 0.5 cup basil
- 0.5 cup basil
- 0.5 cup Parmesan cheese
- 0.25 cup Parmesan cheese
Instructions
- Slice 5-6 chicken sausages into 1/4-inch thick pieces.
- Heat 1 tablespoon of olive oil in a large saucepan over medium heat until the oil shimmers.
- Add the sliced sausages to the pan and fry them for about 5-7 minutes until they are golden and crispy, stirring occasionally.
- Add 1 good handful (about 1/2 cup) of chopped sundried tomatoes to the pan.
- Add 1 cup of orzo to the saucepan.
- Pour 500ml (about 2 cups) of water into the saucepan and bring to a simmer.
- Reduce the heat to low and let the mixture simmer until the orzo is tender, about 10-12 minutes. Stir occasionally to prevent sticking.
- Finely chop a good handful (about 1/2 cup) of fresh basil leaves.
- Remove the saucepan from heat and stir in the chopped basil and as much grated Parmesan cheese as desired.
- Serve the sausage orzo hot, garnished with additional Parmesan cheese if desired.
