Marry Me Sausage Orzo

Ingredients

  • 5 pieces chicken sausages
  • 1 tablespoon olive oil
  • 5 pieces chicken sausages
  • 0.5 cup sundried tomatoes
  • 1 cup orzo
  • 500 ml water
  • 1 cup orzo
  • 0.5 cup basil
  • 0.5 cup basil
  • 0.5 cup Parmesan cheese
  • 0.25 cup Parmesan cheese

Instructions

  1. Slice 5-6 chicken sausages into 1/4-inch thick pieces.
  2. Heat 1 tablespoon of olive oil in a large saucepan over medium heat until the oil shimmers.
  3. Add the sliced sausages to the pan and fry them for about 5-7 minutes until they are golden and crispy, stirring occasionally.
  4. Add 1 good handful (about 1/2 cup) of chopped sundried tomatoes to the pan.
  5. Add 1 cup of orzo to the saucepan.
  6. Pour 500ml (about 2 cups) of water into the saucepan and bring to a simmer.
  7. Reduce the heat to low and let the mixture simmer until the orzo is tender, about 10-12 minutes. Stir occasionally to prevent sticking.
  8. Finely chop a good handful (about 1/2 cup) of fresh basil leaves.
  9. Remove the saucepan from heat and stir in the chopped basil and as much grated Parmesan cheese as desired.
  10. Serve the sausage orzo hot, garnished with additional Parmesan cheese if desired.
