Crustless Sweet Potato Quiche With Smoked Salmon

Ingredients

  • 1 tsp extra virgin olive oil
  • 1 unit large sweet potato
  • 1 unit large sweet potato
  • 4 units medium eggs
  • 60 g quark
  • 0.5 tsp salt
  • 0.5 tsp pepper
  • 0.25 tsp paprika
  • 0.25 tsp garlic powder
  • 100 g smoked salmon
  • 50 g frozen peas
  • 30 g fresh spinach
  • 30 g grated Parmesan cheese

Instructions

  1. Preheat your oven to 400°F (200°C) and lightly grease a pie dish with olive oil.
  2. Using a sharp knife or a mandoline slicer, thinly slice the sweet potato into rounds, about 1/8 inch thick.
  3. Arrange the sweet potato slices in an even layer along the bottom and sides of the prepared pie dish to form a crust.
  4. In a mixing bowl, whisk together the eggs, quark, salt, pepper, paprika, and garlic powder until well combined.
  5. Stir in the chopped smoked salmon, frozen peas, and fresh spinach to the egg mixture.
  6. Pour the egg mixture over the sweet potato crust, spreading it evenly with a spatula.
  7. Sprinkle the grated Parmesan cheese evenly over the top of the quiche.
  8. Bake in the preheated oven for 35-40 minutes until the quiche is set and the top is golden brown.
  9. Remove the quiche from the oven and let it cool slightly before slicing and serving.
