Caesar Tortellini Pasta Salad

Ingredients

  • 1 pinch salt
  • 0.5 lb tortellini
  • 2 cloves garlic cloves
  • 1 tbsp capers
  • 0.75 cup mayonnaise
  • 0.25 cup Greek yogurt
  • 1 tbsp capers
  • 2 cloves garlic cloves
  • 1 whole lemon lemon juice
  • 1 tbsp Dijon mustard
  • 1 tbsp soy sauce
  • 0.5 cup Parmesan cheese
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 4 handfuls romaine lettuce
  • 0.75 cup large breadcrumbs
  • 0.25 cup Parmesan cheese
  • 0.5 cup dressing
  • 0.25 tsp black pepper

Instructions

  1. Fill a large pot with water and add a generous pinch of salt.
  2. Bring the water to a boil over high heat.
  3. Add 1/2 lb of tortellini to the boiling water and cook according to the package instructions until al dente.
  4. Drain the cooked tortellini and rinse under cold water to stop the cooking process.
  5. Grate 2 cloves of garlic finely using a microplane or grater.
  6. Chop 1 tbsp of capers finely.
  7. In a bowl or food processor, combine 3/4 cup mayo, 1/4 cup Greek yogurt, chopped capers, grated garlic, juice of 1 whole lemon, 1 tbsp Dijon mustard, 1 tbsp soy sauce, and 1/2 cup freshly grated Parmesan cheese.
  8. Season the dressing with salt and black pepper to taste. Adjust the consistency with water if needed.
  9. In a large mixing bowl, combine the cooked tortellini, 3-4 handfuls of chopped romaine, 3/4 cup large breadcrumbs, and freshly grated Parmesan cheese.
  10. Toss the salad with the desired amount of dressing to coat evenly.
  11. Season the salad with additional freshly ground black pepper to taste before serving.
  12. Serve immediately or refrigerate until ready to serve. If storing, add the lettuce just before serving to maintain its crispness.
