Caesar Tortellini Pasta Salad

Ingredients
- 1 pinch salt
- 0.5 lb tortellini
- 2 cloves garlic cloves
- 1 tbsp capers
- 0.75 cup mayonnaise
- 0.25 cup Greek yogurt
- 1 tbsp capers
- 2 cloves garlic cloves
- 1 whole lemon lemon juice
- 1 tbsp Dijon mustard
- 1 tbsp soy sauce
- 0.5 cup Parmesan cheese
- 0.5 tsp salt
- 0.5 tsp black pepper
- 4 handfuls romaine lettuce
- 0.75 cup large breadcrumbs
- 0.25 cup Parmesan cheese
- 0.5 cup dressing
- 0.25 tsp black pepper
Instructions
- Fill a large pot with water and add a generous pinch of salt.
- Bring the water to a boil over high heat.
- Add 1/2 lb of tortellini to the boiling water and cook according to the package instructions until al dente.
- Drain the cooked tortellini and rinse under cold water to stop the cooking process.
- Grate 2 cloves of garlic finely using a microplane or grater.
- Chop 1 tbsp of capers finely.
- In a bowl or food processor, combine 3/4 cup mayo, 1/4 cup Greek yogurt, chopped capers, grated garlic, juice of 1 whole lemon, 1 tbsp Dijon mustard, 1 tbsp soy sauce, and 1/2 cup freshly grated Parmesan cheese.
- Season the dressing with salt and black pepper to taste. Adjust the consistency with water if needed.
- In a large mixing bowl, combine the cooked tortellini, 3-4 handfuls of chopped romaine, 3/4 cup large breadcrumbs, and freshly grated Parmesan cheese.
- Toss the salad with the desired amount of dressing to coat evenly.
- Season the salad with additional freshly ground black pepper to taste before serving.
- Serve immediately or refrigerate until ready to serve. If storing, add the lettuce just before serving to maintain its crispness.
