- 100 g smoked bacon lardons
- 1 medium onion
- 2 tsp crushed garlic
- 150 ml cream
- 1 pinch salt
- 1 pinch pepper
- 100 ml pasta water
- 50 g parmesan
- 1 bunch fresh parsley
Instructions
- Pour 2 liters of water into a large pot and bring to a boil over high heat.
- Add 200g of pasta to the boiling water and stir immediately to separate the strands. Cook as per the package instructions until al dente.
- While the pasta is cooking, heat a non-stick pan over medium heat. Add 100g of smoked bacon lardons.
- Fry the bacon lardons, stirring occasionally, until crispy, about 5 minutes.
- Add 1 diced onion to the pan with the bacon and continue to fry for another 5 minutes, until the onion is translucent.
- Add 2 teaspoons of crushed garlic to the pan, stirring constantly for 30 seconds until fragrant.
- Add 150ml of cream to the pan, then season with a pinch of salt and pepper, stirring to combine.
- Reduce the heat to low and bring the cream to a gentle simmer.
- Add approximately 100ml of pasta water to the pan, then add 50g of grated parmesan cheese and a bunch of chopped fresh parsley. Stir to combine.
- Drain the cooked pasta and add it to the pan with the sauce. Toss well to ensure all the pasta is coated evenly.
- Serve the pasta immediately, garnishing with additional parmesan and parsley if desired.
