Creamy Bacon & Parmesan Pasta

Creamy bacon and parmesan pasta, perfect for a mid-week meal! Ready in just 20 minutes, this dish is rich, hearty and sure to satisfy. It's made with pasta, smoked bacon lardons, and a creamy parmesan sauce, garnished with fresh parsley.

Creamy Bacon & Parmesan Pasta

Cook time: 20 minutes

Ingredients

  • 200 g pasta
  • 100 g smoked bacon lardons
  • 100 g smoked bacon lardons
  • 1 medium onion
  • 2 tsp crushed garlic
  • 150 ml cream
  • 1 pinch salt
  • 1 pinch pepper
  • 100 ml pasta water
  • 50 g parmesan
  • 1 bunch fresh parsley

Instructions

  1. Pour 2 liters of water into a large pot and bring to a boil over high heat.
  2. Add 200g of pasta to the boiling water and stir immediately to separate the strands. Cook as per the package instructions until al dente.
  3. While the pasta is cooking, heat a non-stick pan over medium heat. Add 100g of smoked bacon lardons.
  4. Fry the bacon lardons, stirring occasionally, until crispy, about 5 minutes.
  5. Add 1 diced onion to the pan with the bacon and continue to fry for another 5 minutes, until the onion is translucent.
  6. Add 2 teaspoons of crushed garlic to the pan, stirring constantly for 30 seconds until fragrant.
  7. Add 150ml of cream to the pan, then season with a pinch of salt and pepper, stirring to combine.
  8. Reduce the heat to low and bring the cream to a gentle simmer.
  9. Add approximately 100ml of pasta water to the pan, then add 50g of grated parmesan cheese and a bunch of chopped fresh parsley. Stir to combine.
  10. Drain the cooked pasta and add it to the pan with the sauce. Toss well to ensure all the pasta is coated evenly.
  11. Serve the pasta immediately, garnishing with additional parmesan and parsley if desired.
