Salmon Ochazuke For One

Ochazuke is a simple and comforting Japanese dish made by pouring hot dashi or green tea over cooked rice. It was actually someone on here who recommended that I try this dish so a big thank you to them - itโ€™s become a firm favourite ๐Ÿ’Œ

Salmon Ochazuke For One

Cook time: 10 minutes

Servings: 1

Ingredients

  • 1 small bowl hot cooked rice
  • 1 dash rice wine vinegar
  • 1 small bowl hot cooked rice
  • 1 dash rice wine vinegar
  • 1 small bowl hot cooked rice
  • 1 teaspoon sesame seeds
  • 2 tablespoons flaked salmon
  • 2 tablespoons spring onions
  • 1 teaspoon furikake seasoning
  • 0.5 teaspoon wasabi
  • 2 teaspoons liquid dashi soup seasoning
  • 200 ml hot water
  • 1 splash soy sauce
  • 200 ml liquid dashi soup

Instructions

  1. Take 1 small bowl of hot cooked short grain or sushi rice.
  2. Add a dash of rice wine vinegar to the hot rice.
  3. Gently fluff the rice with a fork to incorporate the vinegar.
  4. Transfer the seasoned rice to a serving bowl.
  5. Sprinkle sesame seeds over the top of the rice.
  6. Top the rice with flaked salmon.
  7. Slice spring onions thinly and scatter over the salmon.
  8. Generously sprinkle furikake seasoning on top.
  9. Add optional dabs of wasabi to taste.
  10. Mix 1-2 teaspoons of liquid dashi soup seasoning with 150-200ml of hot water.
  11. Add a splash of soy sauce to the dashi broth.
  12. Gently pour the hot broth over the rice and toppings until just submerged.
