Viral Chicken Caesar Smash Tacos

Ingredients

  • 1 lb ground chicken
  • 0.5 tsp garlic powder
  • 0.5 tsp Italian seasoning
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 6 pieces fajita-size tortillas
  • 1 tbsp olive oil
  • 1 cup mayonnaise
  • 2 tsp Dijon mustard
  • 2 tsp Worcestershire sauce
  • 0.5 pieces lemon
  • 1.5 tsp red wine vinegar
  • 2 cloves garlic cloves
  • 2 tbsp olive oil
  • 0.33 cup Parmesan
  • 0.25 tsp salt
  • 0.5 tsp black pepper
  • 1 pieces romaine heart
  • 0.33 cup Caesar dressing
  • 0.5 cup Parmesan
  • 0.5 cup croutons
  • 0.5 cup croutons
  • 0.25 cup Parmesan
  • 0.1 cup Caesar dressing

Instructions

  1. In a medium bowl, combine 1 lb ground chicken with 1/2 tsp garlic powder, 1/2 tsp Italian seasoning, 1/2 tsp salt, and 1/4 tsp black pepper until well mixed.
  2. Lay out 6 fajita-size tortillas (about 6 inches in diameter). Evenly spread a thin layer of the seasoned chicken onto one side of each tortilla.
  3. Heat a large skillet over medium-high heat and add a little olive oil. Place each tortilla chicken-side down onto the skillet.
  4. Cook the tortillas chicken-side down for 3–4 minutes until the chicken is golden and cooked through. Flip them gently using a spatula and cook for an additional 1–2 minutes.
  5. In a separate bowl, whisk together 1 cup mayonnaise, 2 tsp Dijon mustard, 2 tsp Worcestershire sauce, juice of 1/2 lemon, 1 1/2 tsp red wine vinegar, 1–2 finely grated garlic cloves, 2–3 tbsp olive oil, 1/3 cup finely grated Parmesan, 1/4 tsp salt, and 1/2 tsp black pepper to make the Caesar dressing.
  6. In a large bowl, toss together 1 romaine heart, finely chopped, with 1/3 cup of the Caesar dressing, 1/2 cup shaved or shredded Parmesan, and half of the 1 cup crushed croutons.
  7. To assemble the tacos, spoon the Caesar salad onto each chicken-coated tortilla. Sprinkle with the remaining croutons and Parmesan, and if desired, drizzle additional Caesar dressing on top.
