Peach Caprese Pasta Salad

Ingredients

  • 2 liters water
  • 1 tablespoon salt
  • 210 grams pasta
  • 210 grams pasta
  • 250 grams cherry tomatoes
  • 2 pieces peaches
  • 0.5 pieces red onion
  • 20 grams fresh basil

  • 1 tablespoon olive oil
  • 1 tablespoon balsamic vinegar

  • 5 grams fresh basil

Instructions

  1. Bring a large pot of salted water to a boil over high heat.
  2. Add 210g of pasta to the boiling water and cook according to the package instructions until al dente.
  3. Drain the pasta in a colander and rinse under cold water. Allow it to cool completely.
  4. Halve the cherry tomatoes.
  5. Slice the peaches into equal bite-sized pieces.
  6. Finely slice the red onion.
  7. Roughly chop most of the fresh basil, setting a few leaves aside for garnish.
  8. Add the cooled pasta to a large salad bowl.
  9. Add the cherry tomatoes, peaches, red onion, chopped basil, and mozzarella balls to the bowl.
  10. In a small bowl, whisk together the olive oil and balsamic vinegar.
  11. Drizzle the olive oil and balsamic mixture over the salad and toss gently to combine all ingredients.
  12. Divide the salad between three serving bowls and top with the reserved basil leaves.
