Peach Caprese Pasta Salad

Ingredients
- 2 liters water
- 1 tablespoon salt
- 210 grams pasta
- 210 grams pasta

- 20 grams fresh basil

Instructions
- Bring a large pot of salted water to a boil over high heat.
- Add 210g of pasta to the boiling water and cook according to the package instructions until al dente.
- Drain the pasta in a colander and rinse under cold water. Allow it to cool completely.
- Halve the cherry tomatoes.
- Slice the peaches into equal bite-sized pieces.
- Finely slice the red onion.
- Roughly chop most of the fresh basil, setting a few leaves aside for garnish.
- Add the cooled pasta to a large salad bowl.
- Add the cherry tomatoes, peaches, red onion, chopped basil, and mozzarella balls to the bowl.
- In a small bowl, whisk together the olive oil and balsamic vinegar.
- Drizzle the olive oil and balsamic mixture over the salad and toss gently to combine all ingredients.
- Divide the salad between three serving bowls and top with the reserved basil leaves.
