Ingredients
- 100 g smoked pancetta block
- 100 g smoked pancetta lardons
- 1 tbsp olive oil
- 500 g fresh gnocchi
- 500 g fresh gnocchi
- 2 garlic cloves
- 2 cloves garlic
- 100 g petit pois
- 2 handfuls baby spinach
- 250 ml double cream
- 30 g Parmesan
- 100 g smoked pancetta lardons
- 1 pinch sea salt
- 1 pinch freshly ground black pepper
- 1 zest lemon zest
Instructions
- Cut 100g of smoked pancetta block into thick lardons using a sharp knife.
- Heat a large non-stick frying pan over medium heat. Add the pancetta lardons and cook until crisp, about 5-7 minutes.
- Transfer the cooked pancetta to a plate, leaving the fat in the pan.
- Top up the pan with 1 tbsp of olive oil if it looks dry, then add 500g of fresh gnocchi.
- Fry the gnocchi for 8–10 minutes, stirring occasionally, until golden and crispy on the outside.
- Using a sharp knife, finely slice 2 cloves of garlic.
- Add the sliced garlic, 100g of petit pois, and 2 handfuls of baby spinach to the pan. Cook for 2–3 minutes until the spinach wilts and the peas are heated through.
- Pour 250ml of double cream into the pan and stir in 30g of grated Parmesan.
- Return the crispy bacon to the pan and stir well to combine all ingredients.
- Season with sea salt and freshly ground black pepper to taste.
- Finish by sprinkling the zest of 1 lemon over the dish and serve hot directly from the pan.
