Avocado Peach & Burrata Summer Toast
This toast is one of my favorites to eat in the summer. It’s soooo good! Use lots of olive oil and flaky salt for this toast—and thank me later. It’s creamy, juicy, salty, sweet… just summer on a slice of sourdough.

Ingredients
- 1 tablespoon Olive oil
- 2 slices Fresh sourdough bread
- 2 slices Fresh sourdough bread
- 2 slices Fresh sourdough bread
- 1 whole Avocado
- 1 whole Avocado
- 2 slices Fresh sourdough bread
- 1 whole Peach
- 1 whole Peach
- 1 whole Avocado
- 2 slices Fresh sourdough bread
- 4 ounces Fresh burrata
- 1 tablespoon Olive oil
- 0.5 teaspoon Flaky salt
- 0.25 teaspoon Pepper
Instructions
- Heat a non-stick skillet over medium heat. Add 1 tablespoon of olive oil and allow it to heat until shimmering.
- Slice 2 pieces of fresh sourdough bread, about 1/2-inch thick.
- Place the slices of sourdough bread in the skillet. Toast until the underside is golden brown, about 3-4 minutes.
- Flip the bread and toast on the other side until golden brown, about 2-3 more minutes.
- Peel and remove the pit from an avocado. Scoop out the flesh and mash it in a bowl until smooth.
- Spread the mashed avocado evenly onto the toasted sourdough slices.
- Slice one peach into thin, even slices.
- Arrange the peach slices on top of the avocado-covered toast.
- Tear fresh burrata into small chunks and distribute evenly over each toast.
- Drizzle extra olive oil over the toast generously.
- Season the toasts with flaky salt and freshly cracked pepper to taste.
