Honey Sesame Chicken Bowls

Ingredients

  • 0.33 cup cornstarch
  • 1 teaspoon garlic powder
  • 0.5 teaspoon salt
  • 0.25 teaspoon pepper
  • 3 cups chicken breasts
  • 0.25 cup avocado oil
  • 3 cups chicken breasts
  • 0.33 cup honey
  • 1 tablespoon tomato paste
  • 1 tablespoon tamari
  • 1 teaspoon sesame oil
  • 1 teaspoon ground ginger
  • 0.25 teaspoon salt
  • 1 tablespoon sesame seeds
  • 0.25 cup sauce
  • 2 tablespoons avocado oil
  • 1 cup snow peas
  • 2 cups brussels sprouts
  • 1 cup shredded carrots
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon salt
  • 0.25 teaspoon pepper
  • 1 cup jasmine rice
  • 1 teaspoon lime juice
  • 1 stalk green onion stalk
  • 0.25 cup reserved sauce

Instructions

  1. Combine 1/3 cup cornstarch, 1 teaspoon garlic powder, 1/2 teaspoon salt, and 1/4 teaspoon pepper in a medium bowl.
  2. Add 3 cups of cubed chicken breasts into the bowl and toss until well coated.
  3. Heat 1/4 cup avocado oil in a large non-stick skillet over medium-high heat.
  4. Add the coated chicken to the skillet and pan-fry for 5-8 minutes on each side until golden brown and fully cooked.
  5. Transfer the chicken to a paper towel-lined plate to drain excess oil.
  6. In a large bowl, mix 1/3 cup honey, 1 tablespoon tomato paste, 1 tablespoon tamari, 1 teaspoon sesame oil, 1 teaspoon ground ginger, 1/4 teaspoon salt, and 1 tablespoon sesame seeds for the sauce.
  7. Set aside 1/4 cup of the sauce for drizzling later.
  8. Add the drained chicken to the large bowl with the sauce and toss until fully coated.
  9. Add 2 tablespoons of avocado oil to the skillet and bring up to medium-high heat.
  10. Add 1 cup snow peas and 2 cups halved Brussels sprouts to the skillet and cook for about 15 minutes.
  11. Add 1 cup shredded carrots, 1/2 teaspoon garlic powder, 1/2 teaspoon salt, and 1/4 teaspoon pepper to the skillet, then cook for another 4-5 minutes, stirring occasionally.
  12. Cook 1 cup jasmine rice according to package instructions, then add 1 teaspoon lime juice and fluff with a fork.
  13. Assemble the bowls by evenly dividing the cooked rice, veggies, and chicken. Top with 1 chopped green onion stalk and a drizzle of the reserved sauce.
