Zucchini Waffles

Ingredients
- 2 medium zucchini
- 2 medium zucchini
- 2 medium zucchini
- 1 large egg
- 0.25 cup freshly grated parmesan cheese
- 0.25 cup all-purpose flour
- 0.25 cup fresh parsley
- 2 tablespoons plain Greek yogurt
- 1 teaspoon kosher salt
- 0.5 teaspoon freshly cracked black pepper
- 2 medium zucchini
- 1 large egg
- 0.25 cup freshly grated parmesan cheese
- 0.25 cup all-purpose flour
- 0.25 cup fresh parsley
- 2 tablespoons plain Greek yogurt
- 1 teaspoon kosher salt
- 0.5 teaspoon freshly cracked black pepper
- 1 as needed cooking spray
- 1 bowl zucchini mixture
- 2 as desired fried eggs
- 1 tablespoon fresh chives
Instructions
- Thoroughly wash and dry the zucchinis.
- Using the coarsest side of a box grater, grate the zucchinis into a large mixing bowl.
- Lightly press the grated zucchini with a paper towel to remove excess moisture.
- Crack the egg into the bowl with the zucchini.
- Add grated parmesan cheese, flour, chopped parsley, Greek yogurt, salt, and pepper to the bowl.
- Mix all the ingredients in the bowl until well combined.
- Preheat your waffle iron according to manufacturer's instructions.
- Spray the waffle iron with cooking spray to prevent sticking.
- Pour enough zucchini mixture into the waffle iron to make one waffle and close the lid.
- Cook for about 10 minutes or until the waffle is deep golden brown.
- Carefully remove the waffle using tongs or a fork.
- Repeat the process with the remaining batter.
- Serve the waffles with extra parmesan cheese, a fried egg on top, and garnish with fresh chives.
