Zucchini Waffles

Ingredients

  • 2 medium zucchini
  • 2 medium zucchini
  • 2 medium zucchini
  • 1 large egg
  • 0.25 cup freshly grated parmesan cheese
  • 0.25 cup all-purpose flour
  • 0.25 cup fresh parsley
  • 2 tablespoons plain Greek yogurt
  • 1 teaspoon kosher salt
  • 0.5 teaspoon freshly cracked black pepper
  • 2 medium zucchini
  • 1 large egg
  • 0.25 cup freshly grated parmesan cheese
  • 0.25 cup all-purpose flour
  • 0.25 cup fresh parsley
  • 2 tablespoons plain Greek yogurt
  • 1 teaspoon kosher salt
  • 0.5 teaspoon freshly cracked black pepper
  • 1 as needed cooking spray
  • 1 bowl zucchini mixture
  • 2 as desired fried eggs
  • 1 tablespoon fresh chives

Instructions

  1. Thoroughly wash and dry the zucchinis.
  2. Using the coarsest side of a box grater, grate the zucchinis into a large mixing bowl.
  3. Lightly press the grated zucchini with a paper towel to remove excess moisture.
  4. Crack the egg into the bowl with the zucchini.
  5. Add grated parmesan cheese, flour, chopped parsley, Greek yogurt, salt, and pepper to the bowl.
  6. Mix all the ingredients in the bowl until well combined.
  7. Preheat your waffle iron according to manufacturer's instructions.
  8. Spray the waffle iron with cooking spray to prevent sticking.
  9. Pour enough zucchini mixture into the waffle iron to make one waffle and close the lid.
  10. Cook for about 10 minutes or until the waffle is deep golden brown.
  11. Carefully remove the waffle using tongs or a fork.
  12. Repeat the process with the remaining batter.
  13. Serve the waffles with extra parmesan cheese, a fried egg on top, and garnish with fresh chives.
