Cream Cheese Marbled Banana Bread Bars

Ingredients

  • 1 cup peanut butter
  • 2 units eggs
  • 4 units overripe bananas
  • 4 cups rolled oats
  • 1 teaspoon baking powder
  • 1 tablespoon cinnamon
  • 8 ounces softened cream cheese

Instructions

  1. Preheat your oven to 350ºF.
  2. Line an 8x8 inch baking pan with parchment paper. Ensure the parchment paper hangs over the edges for easy removal.
  3. In a large mixing bowl, combine 1 cup of peanut butter, 2 eggs, and 4 medium overripe bananas. Mash the bananas well and mix until the mixture is smooth.
  4. Add 4 cups of rolled oats, 1 teaspoon of baking powder, and optionally, 1 tablespoon of cinnamon to the banana mixture. Stir well to combine.
  5. Pour the batter into the prepared 8x8 inch pan, spreading it evenly with a spatula.
  6. Dollop 8 ounces of softened cream cheese over the top of the oat mixture. Use a knife or skewer to swirl the cream cheese into the batter.
  7. Bake in the preheated oven for 30-35 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out clean.
  8. Allow the banana bread bars to cool in the pan for at least 15 minutes before lifting them out using the parchment overhang to cool completely on a wire rack.
  9. Once cooled, slice the banana bread into bars and serve.
