Ingredients
- 1 cup peanut butter
- 2 units eggs
- 4 units overripe bananas
- 4 cups rolled oats
- 1 teaspoon baking powder
- 1 tablespoon cinnamon
- 8 ounces softened cream cheese
Instructions
- Preheat your oven to 350ºF.
- Line an 8x8 inch baking pan with parchment paper. Ensure the parchment paper hangs over the edges for easy removal.
- In a large mixing bowl, combine 1 cup of peanut butter, 2 eggs, and 4 medium overripe bananas. Mash the bananas well and mix until the mixture is smooth.
- Add 4 cups of rolled oats, 1 teaspoon of baking powder, and optionally, 1 tablespoon of cinnamon to the banana mixture. Stir well to combine.
- Pour the batter into the prepared 8x8 inch pan, spreading it evenly with a spatula.
- Dollop 8 ounces of softened cream cheese over the top of the oat mixture. Use a knife or skewer to swirl the cream cheese into the batter.
- Bake in the preheated oven for 30-35 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out clean.
- Allow the banana bread bars to cool in the pan for at least 15 minutes before lifting them out using the parchment overhang to cool completely on a wire rack.
- Once cooled, slice the banana bread into bars and serve.
